Once upon a time…

A hillside house waiting to become something extraordinary. Thirty-eight years ago, Carlo had what some might call a crazy idea: a vegetarian farm restaurant, at a time when “vegetarian” was barely a word people knew.

Not long after, Gianluca was born: Dongili’s chef. Since then, between the garden, the pots, and the changing seasons, this hillside has become a home for those who seek the true flavours of the land, in a setting that feels out of another era.

From the earth to the table

Since 1988, we've been cultivating our vision of cooking: simple, plant-based, honest. Everything starts here, among the terraced garden beds and the hands that tend them every day. Every plant, every herb, every flower finds its place in the kitchen, where Gianluca transforms them according to the season.

A few examples?

Curly kale in winter, Jerusalem artichoke in autumn, asparagus in spring, watermelon in summer.
